You can cut down the cheese for an even healthier version but I wouldn’t get rid of it altogether. The cheese adds flavor, creaminess and moisture to the spinach filling.

The combination is fabulous and these Cuban’s are delicious and filling I was introduced to ‘ The Cuban’ in New York City, I had one for breakfast at a Cuban diner — even at 8am in the morning the Cuban music was blaring!
