By Susan, on October 29th, 2010 These are lovely delicate ginger sandwich cookies complete with double ginger filling. You could fill them with any flavor icing but I wanted an intense ginger taste. Can you have too much ginger? I have slowly become a huge ginger fanatic: ginger beer, ginger cookies, chocolate covered ginger, ginger cake, ginger ale – it is all fantastic! These are a UK goodie, a fair few members of my extended family have grown up in the UK and never having a real Jaffa cake myself I was curious to see how this homemade version would hold up. My Dad give me his meat slicer the other week so I have been busy slicing everything from it’s intended use of roast beef, roast pork and ham and have even subjected pickles to a good slice. As a thank you gift I baked Dad some gingerbread.
He was complaining that they just weren’t the same these days, he recalled his child hood memories of large gingerbread men with a nice soft cakey texture compared to the hard crunchy gingerbread you get today. And so began my gingerbread challenge!
