Lemon Blueberry Cupcakes with Blueberry Cream Cheese Frosting

I only recently became a Blueberry fan, mainly because they have always been fairly expensive in Australia and not that commonly used (compared to other parts of the world).  But, after spending 2 months in New York during winter I absolutely fell in love with blueberries and ate them every chance I got….. hmmm…. blueberry pancakes and blueberry tart and bagels with blueberry cream cheese … drool….

They were slightly cheaper in the US ($3 a punnet), I must say I was expecting them to be a lot cheaper.  Well I am back home now and have decided I am willing to pay $4 for a punnet which is a very good price here considering they can fetch up to $6 or $7.  I decided to explore my new found love for blueberries and came up with  ‘Lemon Blueberry Cupcakes with Blueberry Cream Cheese Frosting’.

Makes 12


Lemon Cupcake Batter

  • 125g (4 1/2 oz) butter at room temperature
  • 1/2 cup of caster sugar
  • 2 eggs at room temperature
  • 3/4 cups of all purpose flour
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 2 teaspoons of vanilla extract
  • Zest of 2 lemons
  • 2 to 3 tablespoons of milk
  • 48 Blueberries


  1. Preheat oven to 200c (400f) and line a 12 hole muffin tin with cupcake cases.
  2. Put all the ingredients for the cupcake batter except the milk and blueberries into a food processor and blitz until smooth.  Pulse while adding the milk down the funnel to make a smooth dropping consistency.
  3. Divide the mixture between the cupcake cases and place 4 blueberries in each cupcake.  Bake in the oven for 15 to 20 minutes. They should have risen and be golden on top.
  4. Let them cool in the tin for 10 minutes before turning them out onto a cooling rack. Top with Blueberry cream cheese frosting (recipe follows).

Blueberry Cream Cheese Frosting

  • 175g (6oz)  icing sugar, sifted
  • 250g (8oz) cream cheese at room temperature
  • 2 1/2 tbs (50g) butter at room temperature
  • 1tsp vanilla extract
  • 1/2 cup of blueberries
  1. Place all the ingredients in a small bowl and beat with an electric hand beater until well combined.

    Hi, looks so yummy, I had to try them.
    Should the recipe say 1 3/4 cups flour – not just 3/4 cups flour?

    Mind did not turn out all that – very oily and flopped in the middle.

    I am going to try again immediately with more flour.

    Hi Sharon,

    3/4 cups of flour is correct. I have used this cupcake recipe (minus the lemon zest) loads of time as a good plain cup cake recipe & has always worked for me :S — Not sure what might have gone wrong. Did you use melted butter? The butter should still be of a firm, solid consistency but not straight out of the fridge.
